Pascal Cotat owns a small domaine in Sancerre, with a traditional and rather limited production but one of the most important and authoritative in the area. The main vineyards of the domaine are both located on the Chavignol terroir, east of Sancerre and cultivated with Sauvignon Blanc, a native vine of the north-eastern Loire region, which in these places reaches excellence.

Pascal also owns a small plot of pinot noir which he uses to produce an interesting and almost unobtainable rosé. The harvest as well as the entire management of the vineyard is manual and respect for the territory is a lifestyle rather than a style of viticulture for this winery. The vinification is carried out with soft pressing and with the aim of enhancing the expression of the territory, only indigenous yeasts are used for fermentation. The rest takes place in 600 liter oak barrels, with an average age of 60 years. No filtrations are carried out.
