The San Giuseppe company, whose name is a toponym that dates back to the early 1900s, became an autonomous farm unit starting from 1992, the year in which Stella Viola Di Campalto took over the property, sanctioning its definitive independence from the company agricultural La Velona, ​​to which it was previously incorporated. Stella, without any knowledge of wine and with a past as a teetotaler, dedicates her first energies to olive growing, making the decision to plant the first four hectares of vines in 1998. From this moment a progressive awareness of everything that revolves around the world of viticulture, with an increasingly demanding and meticulous approach.

In 2001 his first wine was born, a Rosso di Montalcino, while in 2002 the company, certified organic since 1996, was converted into biodynamic. In the same year Stella expands its viticultural heritage reaching the current 6.7 hectares of vineyards.

The winery inaugurated in 2002, the same year in which I decided to start biodynamic production, is located on three levels with a gravity system, and was designed to enhance the potential of each individual vineyard: the grapes, harvested by hand in small crates, once de-stemmed, fall into the underlying 30 quintal wooden vats. Nothing is added before, during and after the arrival of the bunch, except sulfur in minimal doses. After the alcoholic fermentation, the "wine" descends into the aging room where we favor the use of small barrels made of thick wood; barriques and tonneaux are also used. The refining room is located 14 meters from the surface, this allows a constant and natural temperature; here the wine rests until it reaches its optimal maturity in full compliance with our quality disciplinary. Once the aging in wood is finished, which can last for some wines over 45 months, we create the mass to be bottled. The disciplinary of Brunello and Rosso di Montalcino would allow to "modify" the wines with other vintages in defined percentages: by our choice we have decided to bottle only the vintage in "purity", that is our wines are always 100% coming from vintage declared on the label. The bottles, filled by gravity one by one, are stored in a controlled temperature environment, until their ideal refinement. We do not intend to deviate from this way of thinking which is the basis of our business: therefore the winemaking concerns exclusively the grapes of our vineyards.
