List of products by brand Domaine de l'Enclos
La domaine de l'enclos is fairly recent in the Chablis wine heritage. It was born in 2016 from the desire of two brothers (Romain and Damien Bouchard) to produce their own wines after the sale of the business founded by their father Pascal Bouchard. The 29 hectares taken over by the two brothers are from the beginning converted to organic farming and a magnificent winery built in the heart of Chablis.
The domaine de l'enclos vinifies the grapes in indigenous yeasts, with no input except a minimum of sulfur after pressing. The wines show generous, gourmet and ripe profiles while retaining the underlying minerality of Chablis terroirs. A very growing value of Chablis, all in organic!
Romain and Damien Bouchard, sons of Pascal Bouchard, began in 2005 to produce their Chablis in a small corner of their father's large winery. A few years later, following their father's sale of the winery, the two sons found themselves with the vineyards and the proceeds of the sale but without a winery and equipment: they then promptly decided to start again by purchasing a property in the center of Chablis to set up their new winery, creating a new Domaine.
The new estate is located in the heart of Chablis on a large property, a former residence of the monks of Pontigny Abbey, which includes a large 19th-century building and a partly underground cellar built in 2016.
Today Romain and Damien Bouchard boast 29 hectares of estate vineyards, whose vines are located on the 4 levels of the Chablis appellation and in particular on some of the most beautiful terroirs. The basic philosophy and grand vision of the Bouchard brothers has been to convert all their land to organic viticulture.
Winemaking is traditional in style but with modern principles of cellar management and useful energy to work with. Gravity drives the process in the two-level cellar, and temperature is controlled by a thermal heat pump and high-efficiency concrete insulation. The wines are aged in stainless steel and French oak barrels.
Those of Domaine de l'Enclos are wines that are very enjoyable when young but give excitement even after resting in the cellar for a few years.
