Pierre Paillard is the name of a small family house located in the commune of Bouzy, Grand Cru of the Montagne de Reims. It was founded in 1946 by the winemaker of the same name but its origins date back to the 18th century, when the Paillard family bought the first vineyards and began to devote themselves to viticulture. Today the eighth generation of the family, represented by the young Antoine and Quentin, has taken over the reins of the Maison, succeeding their father Benoit, cousin of Bruno Paillard, and impressing a significant qualitative change in production.

The Paillard family owns 11 hectares of vineyards, all included in the Bouzy area and divided into 30 plots. The high presence of Chardonnay in the family's vineyards is unique throughout the territory, dominated by Pinot Noir. The cultivation method is close to the principles of biodynamic agriculture and, since 1990, no products of chemical origin have been used. In the cellar, fermentation takes place with pied de cuve in heat-conditioned steel tanks or, for the vinification of the individual parcels of the vineyard, in terracotta amphorae and barriques with subsequent spontaneous malolactic fermentation. After refermentation in the bottle, the Champagnes rest for years in ancient underground cellars dating back to the 19th century.

The Champagne Pierre Paillard are authentic expressions of the Bouzy territory, signed by young people representing a family of ancient traditions. Each label is marked by great clarity, momentum and stylistic precision, qualities that have contributed in recent years to relaunch the fame of this Récoltant Manipulant family which, after centuries of history, has maintained small dimensions and an artisan status by continuously privileging quality. The production comes from a rigorous and thoughtful enhancement and selection of the micro plots that make up the family vineyard, in order to create and reproduce that priceless harmony that has made Champagne famous and in demand all over the world.
