The production is obtained almost exclusively from the milling of olives of the variety "Carpellese", an ecotype that has always been cultivated in the area and 30% of olives of the variety "Frantoio". The olives are harvested by hand and immediately pressed in the mill that uses the best oil technologies on the market
The extraction takes place cold with temperatures lower than 27 kg. preserving in this way the organoleptic characteristics typical of extra virgin olive. CHARACTERISTICS OF THE OIL: The oil has a color ranging from green to straw yellow more or less intense. The taste is a delicate oil. The aroma has a medium fruity with herbaceous notes and hints of green apple. The taste is sweet, almond, with notes of bitter and spicy harmoniously balanced.
