To obtain a liter of oil, you need about 8 kg of olives. The result is a very aromatic and fragrant oil; being easily digestible, particularly suitable for children’s nutrition. The pitted extra virgin olive oil is obtained from the cold processing of olives of the olive mill and carpellese. With this procedure the core is removed and the pulp of the olives is processed.
The high value of polyphenols (antioxidants) present in nature ensures good stability over time ensuring an oil always fresh. This particular oil with a very intense and fruity aroma has the advantage of having a very low acidity and a high resistance to oxidation, thanks to the elimination of the core from the extractive process. It has a green color with golden reflections from the raw artichoke flavor intense and persistent on the palate with shades of green apple and sweet almond aftertaste. It can be used raw on salads and vegetables, also excellent on fish.
