
The grapes of Meunier, Chardonnay and Pinot Noir come from vines between 30 and 50 years old, beautifully exposed to the southeast. Fermentation takes place only with indigenous yeasts. The aging takes place in wood, with a maturation of the base wines of about one year, before proceeding to the final assembly. The second fermentation follows the rules of the Champenoise Method, with a stop on the lees for at least 30 months. In the glass has a straw yellow color, crossed by a fine and persistent perlage. The bouquet is intense and expressive, with elegant floral scents, aromas of citrus, ripe fruit, honey, vanilla, spices and pastry. The palate is refined, with a creamy and long sip, which extends harmoniously towards a fresh and pleasantly savory finish.
