On visual examination it is dark ruby red and intense.
Intriguing, articulate and very clean on the nose, characterized by balsamic hints of cherry and raspberry in spirit, tobacco, pepper and vanilla.
The tasting is a Chianti that needs a good period of rest in the bottle to express its best, a harmonious, fine and full-bodied Sangiovese, incredibly chiselled and silky in its tannic structure, even though it has an unusually dry and mineral sip, with a spicy and earthy finish.
Fattoria di Lamole follows the principles of organic farming.
The vinification takes place partly in stainless steel tanks, partly in cement, after which it ages for at least 12 months in cement jars, before passing in exhausted French barriques, where the wine remains for a period of 12 to 24 months.
The production process ends after a 12-month aging in bottle.
